Traditional Provence shuttle recipe revisited by Pierre Hermé.
The shuttle is a Provençal biscuit symbolized by the boat that brought Marie Jacobé, Marie Salomé and Sara from Palestine to the coasts of Provence. The village of Saintes-Maries de la Mer in the Camargue was named in honor of these three Saints.
To recall this story, Mr. Aveyrous, in 1781, would have had the idea of giving a biscuit the shape of a boat.
Shuttles were traditionally bought by the dozen for good luck throughout the twelve months of the year.
